Oatmeal Maple Cookies
These cookies were meant to be made with molasses, however, given that we’re a maple farm, I made them with 100% pure Vermont Maple Syrup. They were a huge success, both at home and at work.
Ingredients
- 5/8 cup oil
- 1 1/4 cup sugar
- 1 egg
- 1.5Tbsp maple syrup
- 3/4 tsp vanilla
- 1 cup + 1.5 Tbsp flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp baking soda
- 1 1/4 cup oats
Instructions
- Cream oil and sugar. Add eggs. Beat in maple syrup and vanilla.
- Combine flour, baking powder, cinnamon, salt and baking soda. Add to creamed mixture. Stir in oats.
- Drop onto sheets.
- Bake at 375 F for 8-10 min or until edges are firm. Cool for 3 min.
Makes about 3 dozen.
