These cookies were meant to be made with molasses, however, given that we’re a maple farm, I made them with 100% pure Vermont Maple Syrup. They were a huge success, both at home and at work.

Ingredients

  • 5/8 cup oil
  • 1 1/4 cup sugar
  • 1 egg
  • 1.5Tbsp maple syrup
  • 3/4 tsp vanilla
  • 1 cup + 1.5 Tbsp flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1 1/4 cup oats

Instructions

  • Cream oil and sugar. Add eggs. Beat in maple syrup and vanilla.
  • Combine flour, baking powder, cinnamon, salt and baking soda. Add to creamed mixture. Stir in oats.
  • Drop onto sheets.
  • Bake at 375 F for 8-10 min or until edges are firm. Cool for 3 min.

Makes about 3 dozen.
