Eleanor and I were looking for a recipe to combine maple and a brownie type sweet treat. She wanted to maple oatmeal cookies, which admittedly are fabulous, but I knew her attention span for dropping the cookies on the sheets would be such that I would end up doing all of the work. I vetoed cookies and we searched for a brownie. We stumbled upon this maple blondie recipe from the Far From Normal blog. In Eleanor’s words “Wow, that’s delicious.”
The recipe requires a cup of maple syrup. If you find yourself wanting to make the recipe but short on Maple syrup, send me an email and we can get some shipped out to you ASAP.
Happy baking!
Maple Blondies:
- 1 Cup Maple Syrup
- 1/2-Cup Brown Sugar
- 1 Egg
- 6 Tbsp. Butter- melted
- 2 tsp. Vanilla
- 2 Cups Flour
- 1/2 tsp Baking Powder
- 1/4 tsp Salt
Get your oven heating to 350 and grease an 8×8 pan.
Reduce the maple syrup a bit on the stove. In a small pan bring the syrup to a boil over med/high heat. Make sure you keep a close eye on it, once it gets boiling it likes to foam up and try to boil over, you can give it a stir or reduce the heat a little if it does. Keep it boiling for about 10 minutes or about 1/4 cup is evaporated. Once that’s done remove it from the heat to cool.
In a large mixing bowl combine your butter, egg, vanilla, brown sugar, baking powder and salt. Mix in your flour and maple syrup alternating and stirring well. Once everything is well combined pour it into your prepared pan.
Pop it in the oven for 30-35 minutes or until a toothpick comes out of the center clean. It should be a nice golden brown at this point.
Let them cool completely… or as long as you can. Cut and enjoy!!
